Auraiya’s Dairy Products: From Village Milk Collection to a Growing Rural Brand

by Incbusiness Team

In Auraiya district of Uttar Pradesh, dairy work moves on daily discipline. Milk must be collected early, transported quickly, and processed before quality declines. What reaches households is not just a product, but a routine shaped by freshness and familiarity.

Under the One District One Product (ODOP) framework, Dairy Products have been identified as Auraiya’s notified category—recognising the district’s farm-linked milk economy and its value-added processing units.

In Gram Chitkapur, Bhanu Pratap operates a dairy unit that converts village milk into ghee, paneer, khoya, curd, and fluid milk supply. The work began at home under his father’s initiative. Over time, Pratap assumed operational responsibility and gradually expanded the scale into a more organised unit. With nearly 12–15 years of involvement, the enterprise reflects steady expansion built on existing local trust.

Financial support received under the ODOP framework strengthened infrastructure and equipment, allowing smoother handling of milk volumes and diversified output.

From Collection to Conversion

Milk is sourced from nearby villages through organised collection points. Once aggregated, it is brought to the unit for processing the same day.

The processing flow varies by product, like Curd, cottage cheese (Paneer), Butter, and Desi Ghee. Each product follows a temperature- and time-based routine. Aroma, texture, and consistency determine readiness.

Using both traditional methods (curd churning for butter) and mechanical cream separation allows operational flexibility depending on daily supply.

Local Market Presence

The supply currently remains concentrated within nearby markets such as Ajitmal and surrounding areas. Ghee, paneer, khoya, milk, and curd move through local demand channels, supporting regular turnover.

From early-morning milk collection to multi-product processing, Auraiya’s dairy units represent a structured rural enterprise model—where agricultural output is converted daily into market-ready dairy products under the ODOP identity.
